a system consisting of a stable dispersion of minute droplets larger than colloidal size of one liquid in another with or without an emulsifier in an immiscible liquid;
e.g. Emulsions can be made by mixing liquids that do not form a uniform mixture when added together, with force, and stabilizing it through adding a substance that reduces the surface tension of a liquid in which it is dissolved.
